It is sophisticated and stylish yet at the same time, intimate and suitably relaxed. A forerunner in the F&B scene — before the star chefs descended on our island with concepts transplanted from Europe and America — homegrown restaurant Bedrock Bar & Grill presents diners with a venue that oozes cosmopolitan charm. It might have opened in 2008, but its appeal has proven evergreen, with patrons returning time and again to its artfully-designed dining room and bar.

Its chic New York-restaurant styling is the work of New York-based design firm AvroKO – the same creative minds behind some of the world’s most stunning restaurants, such as sophisticated supper club Rose. Rabbit. Lie in Las Vegas, the enchanting Catalunya in Hong Kong and elegant Italian restaurant Boccalino, housed within Four Seasons Hotel Seoul. And though it references world-class restaurants in the Big Apple, oft full of personality and with a distinct buzz, the ground floor unit in Pan Pacific Serviced Suites Orchard is a calm oasis within its environment.

It might face a row of bustling, brightly-lit casual eateries, but step within and you will be welcomed into an atmospheric space bathed in the warm glow emanating from the retro light fixtures. The whisky bar by the entrance is a splendid sight for aficionados: a gorgeous, backlit wall-display that stretches to the ceiling, positively crowded with an extensive collection, including over 60 single malt whiskies, each carefully sourced from around the world. Behind the stately black granite bar is where their mixologists shake and stir up a range of craft cocktails, from the classic Bloody Mary and Moscow Mule to a heady Masala Mai Tai concocted with a mix of garam masala spiced rum, orange curacao, almond syrup and lime juice.

The main dining room puts elements of traditional steakhouses alongside industrial-chic detailing: Think plush, custom-made leather booth settings in a space of unfinished timber floors and walls covered in rustic-looking planks. The private dining room is segregated not by heavy wooden doors but folding metal mesh screens. At one end of the dining room, a white marble service counter — in stark contrast to the black granite bar counter — serves as a front for the open kitchen, where a team headed by Head Chef Isaac Tan fires up a repertoire that has won the restaurant numerous awards. The cuisine is simple yet on point: Premium meats and seafood, expertly cooked to juicy, tender perfection over wood-fired grills — just the right thing to treat your loved one with in this charmingly designed space.

Lavish Spanish dinner parties. Stylish eats from late-night suppers in New York brasseries. Refreshing, casual midday meals in Sydney. These are the diverse sources of global influence that shape the menu at Bedrock. Yet every item is grounded in the foundation of freshness and simplicity.

The chefs work directly with farms all over the world for the best meats and seafood, and use only simple methods such as wood grilling and smoking to highlight the produce’s natural flavours. So you get creations such as a soup of Applewood-smoked sweet tomatoes, served with a touch of basil mascarpone; seasonal oysters, freshly-shucked, served with a red wine-shallot mignonette; and even vegetarian options such as grilled mushroom with truffle fries. Not to be missed either is their famous Tomahawk Steak: a 400-day grain-fed F1 Australian Wagyu long bone rib eye weighing between 1.6kg to 2.5kg, grilled to perfection so that it presents a lovely charred exterior yet remains succulent.

Complementing the gourmet creations from the kitchen is a range of over 60 single malt whiskies and a repertoire spanning classic cocktails to inventive new shakes from the full-service whisky bar. Whet your appetite with a refreshing Bedrock Whisky Sour made with Redbreast 12-year-old Irish whiskey, fresh lemon juice and simple syrup; and round off the evening with a contemplative single malt on the rocks. And if you speak to the mixologists, you might just find them concocting you a drink based on your taste preferences – because it’s all about helping to create a perfect dining experience for you.
